7:45 PM: St. Martin’s Dinner at the Festival Hall of the Palasport.
Menu:
Soft Trentingrana cream, green cornets, cured pork loin, and Chardonnay foam.
Alpine char fillet on wild herbs, saffron velouté, potato straws, and speck.
Pearled barley risotto with yellow pumpkin, aged Modena cheese, and crispy pork.
Rabbit roll “porchetta-style” with chestnut cream, vegetables, and local mushrooms.
