Bear’s lettuce (Cicerbita alpina) is a wild herb that grows at high altitude. Similar to asparagus, with its green and pink shades, it is a precious ingredient in mountain cuisine, valued for its delicate and slightly bitter flavour, perfect for enriching traditional dishes and creating new, tasty combinations.

Carefully gathered, bear’s lettuce represents a small natural treasure, an expression of Alpine biodiversity and the seasonality of mountain pastures.
Harvesting is regulated to ensure the preservation of this precious resource: it is permitted from 8:00 a.m. to 7:00 p.m., with a maximum limit of 2 kg of fresh product per person per day, reserved for those over 10 years old.
You should know that...
In the Adamello Brenta Nature Park only residents are allowed to collect up to five flowering stems of non-protected species and limited quantities of traditionally used plants (e.g. strigoli, mountain pine cones, woodruff, mosses, mistletoe, lichens, wild asparagus, farinei, bear’s lettuce, elderflowers, dandelion, nettles) up to a daily limit of 2 kg. Collection is prohibited for non-residents.
