One of the PDO Trentino cheeses is Spressa of Giudicarie.
This PDO cheese is especially characterised by its leanness and ageing.
In fact, it is a cheese with an intense flavour that brings the perfume of fresh grass and mountain flowers to the palate.
Spressa delle Giudicarie PDO is aged from 8 to 12 months. To this day, it is still produced using artisanal methods.
LA SPRESSA
Raw material: cow's milk
Ingredients: milk cultures, rennet, salt
Appearance: compact with a pale straw colour and scattered small to medium sized holes
Shape: cylindrical with a diameter of 30-35 cm, height about 8-11 cm
Weight: varies from 08 to 10 kg
Rind: irregular, elastic
Ageing: young after 3 months, old after 8 months
Flavour: sweet, savoury and distinctive
Razza Rendena Cheese
Razza Rendena Cheese is made from the milk of native cows of the same breed, raised according to traditional methods and recognized by the Slow Food Presidia for their uniqueness and deep connection to the Trentino territory.
The cows are fed in harmony with natural rhythms: hay from valley meadows, free grazing in pastures and alpine meadows during the summer, with minimal supplementation in the winter months. This balance between environment and farming gives the milk exceptional quality and the cheese an authentic taste, rich with aromas of fresh grass and mountain flowers.
The aging process, lasting from 4 to 5 months, enhances its aromatic character and gives the cheese a soft yet compact texture.
In our area, several certified farms are part of the Slow Food Razza Rendena Presidia, keeping this cheesemaking tradition alive: Azienda Agricola Fattoria Antica Rendena, Azienda Agricola La Regina, and Azienda Agricola Polla Mauro. Alongside these, other outstanding local producers committed to sustainability and quality stand out - such as Azienda Agricola Villi Mattia, producer of Slow Food Presidia honey, Macelleria Bazzoli, and Azienda Agricola Biologica Artini, which raises organic Razza Rendena cattle for the production of top-quality milk and meat.

Here, animal feed follows strict organic standards: only natural grass, pesticide-free hay, and no chemical feed supplements. The result is pure, wholesome milk that becomes cheese with an authentic taste, full of fresh aromas and delicate notes that capture the true essence of the mountains. These cheeses are produced by Azienda Agricola Polla Mauro and Azienda Agricola Al Pont.
