Among these, gentian is perhaps the most emblematic: obtained from the roots of the plant harvested in Alpine pastures, it is fermented and slowly distilled, resulting in a bold and persistent spirit capable of evoking the aromas and essences of high altitudes.

A symbol of Alpine tradition, gentian stands out for its intense character and its herbaceous, slightly bitter notes. Long appreciated as a digestif, it embodies ancient knowledge tied to seasonal harvesting and to a careful process that respects the rhythms of nature.
In the Giudicarie area, this tradition is still alive thanks to producers such as Distilleria Boroni, the only one in the local area, preserving an artisanal history passed down for over 150 years and closely linked to the distillation of gentian roots.
